Tiramisú piña colada

Here is another tiramisu, these I have dedicated to Latin America and calls to mind the well known cocktail "piña colada",  though this tiramisu has no liquor. So it is suitable for our childrens.


Ingredients for 8 glasses: 12 cookies tiramisu type, 1 lb pastry cream, 7 oz mascarpone cheese, 7 oz whipped cream, 2 oz icing sugar, 4 oz shredded coconut, 7 oz pineapple in syrup. Preparation: We break the biscuits into small pieces and reserve. We take an average salad and add the pastry cream, mascarpone cheese and icing sugar. Assemble all with electric mixer. Divide the mixture into two, add the grated coconut and pineapple in small pieces on the other. We recall that we leave some pineapple for garnish. (See photo).
Mix the cream with the grated coconut and after the cream and pineapple into small pieces. We add the whipped cream to the cream with coconut and to the cream with pineapple. Mix carefully from the bottom to the top. We take 8 glasses and put in each cup some cookies into small pieces. With the pastry bag make a circle cream with pineapple, again some cookies and a circle with coconut cream. Alternate tastes and in this manner we ended the glasses with the cream with grated coconut. (See photo). Decorate the glasses with a bit of fantasy or copy my photo above.
