Wild chicory with fresh sausages


As promised, here is a recipe with wild chicory. In Rome, this recipe is an institution. In Roman trattorias it is almost always present in the menu. Wild chicory fresh sausages. A simple dish, but you should prepare carefully for the best.

Ingredients for 4 people:

800 grams of boiled wild chicory,
2 cloves garlic, finely chopped
8 tablespoons extra virgin olive oil,
8 fresh sausages,
2 peppers into small pieces,
little salt.

Preparation:

In the previous post we saw how to boil wild chicory. From here, we take a large pan and pour: the extra virgin olive oil, chopped garlic and hot pepper. Cook over low heat for less than three minutes and pour all the boiled wild chicory. Add a little salt and in the same pan drilled eight fresh sausages with a fork. Cover the pan with a lid and continue cooking, stirring frequently. Always remember to cover the pan. The recipe is ready in about 30 minutes. We serve hot or warm with fresh bread possible.
