Pizza zucchini flowers

Today I leave the recipe of a pizza with more or meno 50 100 hydration. A cruiente outside and soft inside pizza. Today we do it with the zucchini flowers in Italia and especially in Rome and Naples much use in the kitchen. Pizza zucchini flowers. Naturally with that recipe and fantasy it is possible to make all kinds of pizzas.

Ingredients for pizza 35 cm pizza:

75 grams of bread flour ... Manitoba,
110 grams of durum wheat,
110 grams of cold water,
10 grams of extra virgin olive oil,
4 grams of salt,
3 grams of dry yeast for pizzas and breads,
5 grams of sugar,
20 grams of extra virgin oil for baking tin,
A little coarse salt.

Preparation:

Take the robot to do the same or knead with your hands, pour the flour, durum wheat, yeast and sugar. Gradually add water until a smooth, well strung mass. Only now slowly pour 10 grams of extra virgin olive oil. Continue kneading and finally add 4 grams of salt. Knead for 15 minutes.
Make the dough for 15 minutes. Now take the baking sheet and pour 20 grams of extra virgin olive oil.
Take the dough and knead with hands for 5 minutes and put the dough in the oil greasing baking tin two sides of the dough. Leave in the oven with the light on for one hour until doubled in volume. Now crush with your fingers the dough to cover the baking tin, put a little coarse salt and leave in the oven with the light on another 40 minutes.
After taking little hot water and 5 grams of extra virgin olive oil, stir with a spoon and pour over crust. Crush again with your fingers and leave in the oven another 60 minutes.
Heat oven to 200 degrees.

Ingredients for seasoning:

250 grams of mozzarella cheese cubes,
10 zucchini flowers clean,
150 grams of unsmoked bacon cubes,
Little salt,
15 grams of extra virgin olive oil.

With hot oven to cook the pizza 15 minutes on top of the oven. Only now add the bacon, flowers and mozzarella cheese. Finally salt and oil.
Cooking pizza for another 10/15 minutes until it is golden brown. Eat hot with optimal cold lager.
